Hawaiian Chicken-Crock Pot

2 lb chicken tenderloin, diced
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce

Marinate overnight. Cook on high 6-8 hours, serve with rice.





Sloppy Joes (bigger recipe in parenthesis)


8 oz drained tomato sauce (1 1/2 cups)
1 medium onion, chopped 
1 TBSP+ 1 tsp mustard (2 TBSP)
2 tsp worcestershire sauce (1 TBSP)
2 lb ground beef (3 LB)
1/4 cup brown sugar (1/3 cup)
1/4 cup vinegar (1/3 cup)
2 TBSP BBQ sauce (3 TBSP)
2 tsp salt (1 TBSP)

Mix and simmer for 20 minutes. Serve with rice or french fries.




Lasagna


2 lbs ground beef, browned and drained
3/4 cup chopped onion
3/4 tsp garlic powder
3/4 tsp oregano
1 quart tomatoes
16 ounces tomato sauce
2 TBSP sugar
1 tsp salt

Mix all together, bring to a boil and let simmer while gathering rest. 
24 ounces cottage cheese, ricotta cheese or instant rice
1 cup parmesan cheese
3/4 lb mozarella cheese, shredded or grated
1 package lasagna noodles, or enough for two full layers

Layer: meat, noodles, cheeses. End with meat and cheese. 
Bake 350 for 45 minutes or 200 3-4 hour. Let set 15 minutes before serving with garlic bread. 






Easy Taco Tamale Pie


2 lb ground beef
1 bag whole kernel corn
16 oz picante sauce
1 bag shredded taco cheese
2 boxes corn muffin mix

Heat oven to 375. Brown beef in skillet, drain, and pour in 9x13 baking dish. Mix in picante sauce, corn and cheese. Prepare corn muffin mix and drop on top of beef mixture. Bake 30 minutes or until corn muffin topping is golden brown. 




Enchiladas


1 8 oz package sour cream 
1 jar picante sauce
1 can refried beans
2 lb ground beef
1 pound cheddar cheese
1 package soft tortillas
1 small onion, diced
1 can enchilada sauce

Mix sour cream, refried beans, 1/2 jar of picante sauce and 1/2 package cheese. Brown ground beef with onion, drain, add mixture of refried beans. Using a ladle or ice cream scoop, spoon mixture into tortillas. Grease casserole dishes. Fold tortillas, put in dish. Pour remaining picante sauce or enchilada sauce over tortillas and sprinkle over rest of cheese. Bake at 400 about 30 minutes. 





Slow Cooker Sesame Seed Chicken


3 lb boneless skinless chicken breast
1 cup honey
1/2 cup soy sauce
4 TBSP dried onion
4 TBSP ketchup
2 TBSP oil (olive, vegetable or coconut)
1 tsp garlic powder
4 tsp corn starch dissolved in 6 TBSP water
sesame seeds

Put chicken in crock pot. Combine honey, soy sauce, onion, ketchup, oil and garlic. Pour over chicken. Cook on low 3-4 hours or high 1 1/2-2 1/2 hours. Remove chicken, leave sauce. Dissolve corn starch and pour into crock pot. Stir to combine. Cook for ten minutes or until thick. 
Cut chicken into bite size pieces, return to crock pot. Sprinkle with sesame seeds. 
Serve over rice. 


Crock Pot Whole Turkey

9.5-10 lb turkey
olive oil
salt 
pepper
garlic powder
dried parsley
onion
Remove innards
Pat dry
Rub olive oil on bird inside and out
Coat with salt, pepper, parsley, garlic powder
Peel onion, plae inside. Put turkey in breast side down
Cook on high 5-6 hours



Egg Rolls

1 pound raw hamburger
1-2 eggs
1 tsp salt
1 tsp soy sauce
1/4-1/2 cup chopped celery
1/4-1/2 cup chopped carrots
1/4-1/2 cup diced mushrooms

Mix it all raw, drop by tablespoon on egg roll wrapper, fold, roll and seal (follow instructions on wrapper package). Deep Fat Fry at 325 degrees until brown. 

Sweet and Sour Sauce 
1/2 brown sugar
1/4 vinegar
1 tsp soy sauce

heat in sauce pan and serve with egg rolls. 



Lemon Mustard Chicken

2 1/2-3 lbs meaty chicken pieces
2 tablespoon cooking oil
1 tablepoon dijon mustard
1 tablespoon lemon juice
1 1/2 tsp lemon juice
1 1/2 tsp lemon pepper
1 tsp dried oregano or basil
1/8 tsp ground red pepper
Skin chicken. Place chicken, bone side up on unheated broiler pan. Broil 4-5 inches from heat for 20 minutes or until light brown. Mix oil, mustard, lemon juice, leon pepper, oregano, red pepper. Brush mustard mixture on chicken, turn chicken, bruh with remaining. Broil 5-15 minutes until chicken is done. 


Creamy Chicken Crescent Ring


1 recipe (or container) crescent rolls
3 cups shredded chicken
1 recipe (or package) taco seasoning mix
8 oz cheese, grated
salt

Make the crescent dough. 
Cook the chicken in taco seasoning mix
Put uncooked crescent rolls on baking stone, wide end in the center forming about a five inch circle. Top each roll with chicken, then cheese, roll up dough and tuck pointed end under. Continue until done. 
Bake 375 for 30-40 minutes 
I have found you have more bread with homemade than with boughten crescent roll dough. 

Honey Curry Chicken Thighs

5 boneless chicken thighs
1/4 cup raw honey
1/4 cup melted butter
1/4 cup dijon mustard
2 tablepoon soy sauce
1 tablespoon curry powder
1 garlic clove, minced
2/3 cup onion, diced
black pepper
parsley

Mix all ingredient except thighs
Marinate 4-8 hours. 
Heat pan to med-hi. 
Cook chicken until done, basting with marinade as it cooks. 


Arroz Con Pollo

3 lb chicken 
1 green pepper, diced
1 small onion, diced
3 cloves garlic
1 small jar pimientos
lime juice
1/2 tsp salt
1 can/bottle beer (optional, but it does add a litte zing)
water
yellow rice (2 boxes..about 4 cups uncooked)
olive oil

Saute onion, green pepper, garlic. Remove from pan
Prepare Yellow rice as box directs, substituting beer for part of the water. 
Squeeze lime juice on chicken, sprinkle with salt. 
Cook in pan from veggies with oil. Debone/dice when done. 
When rice is done, add chicken, veggies and pimientos. 
If you want, just add the veggies and pimientos to the rice and serve chicken on the side.
